Gluten Free Friands (Makes 12) Ingredients: 200g butter melted and cooled
6 egg whites
Zest and juice of one lemon
3 cups of ground almonds
2/3 cup of cornflour
2 cups of icing sugar
Method: Mix the melted butter and egg whites together.
Combine the dry ingredients and mix with butter and egg.
¾ fill greased friand tins or muffin trays.
Top with raspberries, blueberries or chocolate chips.
Bake at 150C for 30-35 minutes.
Remove from tins while still warm and dust with icing sugar.
Eava's Carrot Cake This is Wheat-free, Gluten-free (if using Gluten free baking powder), Dairy-free.
Ingredients: 2 cups Organic Brown Rice Flour
2 tsp baking powder (gluten free avail at organic shops)
1 scant cup soft brown sugar
4oz drained, tinned peaches roughly chopped
8oz grated carrots
2 small ripe bananas mashed
2 eggs
1/4 cup rice milk
Method: Lightly grease 18cm round loose-based cake tin, line with baking paper.
Preheat oven to 180oC. Put flour, baking powder and sugar into bowl,
mix well, then add peaches.
Squeeze out juice from grated carrots and discard.
Add carrot to mixture along with bananas.
In a separate bowl beat eggs and oil together until well mixed and fold into
flour mixture with a wooden spoon.
Spoon into prepared tin then cook for 1 to 1&1/4 hours.
When cooked remove from tin and cool. This cake is lovely without icing.
